A few months ago, I had a martini at Zengo made with almond milk, vodka and vanilla extract and haven’t been able to get it out of my head. While the vanilla extract was too harsh of a flavor for the cocktail, I was inspired by the concept of an almond milk martini with subtle sweet vanilla undertones. And, I’ve always wanted to try this with white rum.
I would love to see almond milk on more cocktail menus because it has such a rich flavor and creamy texture. When I asked DB [dinnering beau], my live-in mixologist and now fiancé, to create something with almond milk and rum, he came up with this tasty, frothy goodness – perfect for weekend cocktailing!
2 oz. unsweetened vanilla almond milk [DB used Blue Diamond Almond Breeze]
1.5 oz. white rum [DB used Tommy Bahama white rum]
1 oz. Godiva white chocolate liqueur
1-2 dashes peach bitters
[do it up!]
Add all ingredients to a shaker and fill with enough ice to cover the liquid. Shake vigorously until the outside of the shaker feels cold, about 15 seconds. A good shake creates the most delish and frothy rumtini. Serve up in a martini glass or over ice in a cocktail glass.
