Happy Delectable December!

This month is all about deliciousness, having fun, and embracing imperfection! E.g., cookies do not have to be perfect circles + ribbons can be gorgeous without a huge Martha-sized production. See this. As a Perfectionist in Recovery, I am determined to seek the low-maintenance route during this super busy month!

To kick of Delectable December, I found the most amazing, super-quick and delish sugar cookie recipe last night. DB and I were whipping up test holiday cocktails and watching How the Grinch Stole Christmas so it just felt right to bake up some cookies! I absolutely adore crispy sugar cookies and I was so pleasantly surprised these came out just how I like them.

I adjusted this recipe for 24 cookies because I was not ready to take on 48 cookies last night! But, now that I have experienced the tastiness of this recipe, I will definitely make another large batch of dough and pop it in the freezer for super quick anytime-cookie-baking.

I added cinnamon and extra vanilla extract to the dough. This is some seriously pretty, fluffy dough. I am also getting super excited about all the other fun versions of this cookie I can make. I want to add some peppermint extract and top off with chocolate sprinkles before baking for extra holiday fun. I definitely want to add food coloring for multi-colored goodness. I also came across eggnog flavoring the other day – uhm, yes, please on eggnog sugar cookies.

These cookies were so simple that the most laborious step was rolling them into little balls. I added my own step of pressing them flat so I could add the gold sparkles on top. Totally worth it.

And … now you have golden, crisp, sweet goodness! These are so pretty and yummy, they would make great homemade gifts wrapped in little cellophane bags and tied with ribbon [low maintenance ribbon, that is :) ]

the goods!
1 c. + 1/3 c. + 1 tbsp. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. baking powder
dash of cinnamon
1/2 c. unsalted butter, softened
3/4 c. white sugar
1/2 egg
1 tsp. vanilla extract
for topping:
metallic gold sanding sugar, found here

bake it up!
Preheat oven to 375°F. In a small bowl, whisk together flour, baking soda, baking powder and cinnamon. Set aside.

In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in the dry ingredients until dough appears fluffy. Press all dough together with a large wooden spoon so it will be easier to scoop evenly with a spoon.

Roll dough into balls, using 1 teaspoon per cookie. Place onto ungreased cookie sheets, leaving about an inch between each cookie. Flatten dough with fingers and then sprinkle on gold sanding sugar or any sprinkles you like.

Bake 8 to 10 minutes, or until edges start to appear golden. Let stand on cookie sheet for two minutes, then transfer to cooling racks.
