Hello there! The bounty of pomegranates is providing endless inspiration for loads of goodness. This dish represents everything I love about salsa. It’s sweet, spicy, juicy, and has unbelievably fresh and crisp flavors. The pomegranates give it a sweet crunch, the ripe mangoes balance out the jalapeno and garlic, and the lime juice melds all the flavors together. Enjoy with blue chips [my fave] or homemade baked tortilla chips. You can also use this as a topping to boost the flavor of grilled chicken, fish, or add to beans and rice for a whole new dish!
I used this recipe as a base then made some changes based on what I adore in salsa! Here is my adapted recipe. Enjoy!
Mango + Pomegranate Salsa Extravaganza
1 cup fresh ripe mango, diced
1 cup pomegranate seeds [arils]
1.5 cups cherry tomatoes, diced
1/2 cup cilantro, chopped
1 garlic clove, minced finely
1 jalapeno, finely diced and seeds removed
fresh juice of 1 lime
fresh ground black pepper + cayenne pepper to taste
Mix it all up thoroughly in a large bowl. Let it sit for 5 – 10 minutes to allow the juices and flavors to enhance. Then indulge in all the sweet and spicy salsa goodness!
